Instructions for Duncan Hines Lemon Cake Mix

- Mixing bowl
- Duncan Hines Lemon Supreme Cake Mix
- 1/3 cup vegetable oil
- Three large eggs
- Wire whisk
- Spatula
- Baking pans
- Vegetable shortening
- Flour
- Toothpick

Pour the Duncan Hines Lemon Cake Mix powder into the mixing bowl. Add 1 1/3 cups of water, 1/3 cup of vegetable oil, and three large eggs.

Thin cake batter is easily mixed with a wire whisk. Break the egg yolks with a wire whisk. Whisk the ingredients together for three to four minutes, until the cake batter is blended and smooth. Scrape down the insides of the bowl with a spatula, then whisk the ingredients for another minute.

Preheat the oven to 350 degrees F if you're using glass or metal cake pans. If your cake pans have a coated surface, heat the oven to 325 degrees F, instead.

Rub vegetable shortening over the inside surface of the pan, using enough to lightly coat the surface. Drop a handful of flour into the pan and move it from side to side to dust the inside surface with the flour. Discard the rest of the flour into the garbage can.

Scrape out the last of the cake batter with a rubber spatula. Fill the baking pan three-fourths of the way with the cake batter.

Bake two 8-inch round or square cake pans for 33 to 36 minutes and two 9-inch round or square cake pans for 28 to 31 minutes. If you're baking your Duncan Hines Lemon Cake in a 13-inch by 9-inch baking pan, bake it for 32 to 35 minutes, while a Bundt cake needs to bake for 38 to 43 minutes. When baking 24 cupcakes, allow 18 to 21 minutes for baking. A few minutes before the suggested cake-baking time is up, test the cake by inserting a toothpick into the center. If the toothpick comes out clean, the cake is ready.

Allow the cake to cool in the pan for 15 minutes. Frost the cake, if desired, after it has completely cooled.

Tips & Warnings
Mix your cake batter with an electric mixer. Beat for two minutes to blend the cake batter ingredients.
Reduce the amount of fat in your Duncan Hines Lemon Cake by decreasing the water to 1 cup, and replacing the oil with 1/3 cup applesauce.
If you live above 3,500 feet, mix the cake batter as instructed above with the addition of 1/4 cup of flour. Bake the cake at 350 degrees F and use the following baking times: 20 to 25 minutes for two 8-inch pans, 28 to 33 minutes for two 9-inch pans, 30 to 35 minutes for a 13-inch by 9-inch pan, 36 to 46 minutes for a Bundt pan, and 14 to 19 minutes for cupcakes.
