How to Cook in a Tube Pan

How to Cook in a Tube Pan thumbnail
Powdered sugar often is used in place of frosting on Bundt cakes.

Tube pans help bakers create cakes with hollow centers, creating a ring effect. These pans make it possible to cook deep cakes without concern that the center will not cook completely. Fancy tube pans with decorative fluting are called Bundt pans. Cakes baked in these pans often are glazed rather than frosted to preserve the distinctive pattern that the Bundt pan creates. Angel food cake pans are tube pans that have straight edges and very tall sides for baking angel food cakes, which rise high. Does this Spark an idea?

Instructions

    • 1

Preheat oven to the temperature stated in the cake recipe.

    • 2

Spray the tube pan with nonstick cooking spray.

    • 3

Sprinkle flour inside the tube pan and rotate the pan so that all inner surfaces are covered with flour. Use additional flour if needed.

    • 4

Pour prepared cake batter into the tube pan, using the spatula to evenly distribute the batter.

    • 5

Put the tube pan in the oven and set the timer for the length directed in the recipe.

    • 6

Check to see if cake is done when the timer goes off. Put on oven mitts and remove the pan from the oven. Stick a toothpick halfway between inner and outer edge of cake. If it comes out clean, the cake is done. If not, put the pan back in the oven for a few minutes and test again.

    • 7

Put on oven mitts and remove the tube pan from the oven and place on the cooling rack for 10 minutes.

    • 8

Place the serving plate upside down on top of tube pan and then, holding both plate and tube pan, invert. The cake should come out cleanly onto the serving plate.

    • 9

Cool the cake completely. Use the frosting, glaze or other topping of your choice to finish the cake.

Tips & Warnings

  • Shortening may be substituted for the nonstick spray when preparing the tube pan.

  • Use the tube pan as a mold for gelatin desserts, especially large ones. Unmold onto a serving platter and then place a container of sweetened cream cheese or sweetened sour cream in the center for a pretty display.

  • Make monkey bread by rolling 1-inch balls of biscuit dough in melted butter, then rolling in a mixture of brown sugar and cinnamon and stacking them evenly into the tube pan.

  • Most tube pans need to be prepared with grease and flour to prevent sticking. When making an angel food cake, this is not necessary since the cake needs to cling to the side of the pan while rising.

  • Angel food cake tube pans should be inverted on a funnel so that the cake cools without collapsing.
