Home-made pasta is a relatively inexpensive and healthy way to make a meal. Many different types of pasta can be made with a variety of sauces and ingredients. Instructions

  1. Preparing Pasta Machine

    • 1

      Secure the pasta machine to a kitchen counter or table with the clamp that came with the machine. Insert the clamp into the square opening on the same side as the handle and tighten the clamp.

      Roll a small ball of dough with your hands on the table and push it through the rollers 3 or 4 times if this is your first time using the machine. This will remove packing oils from the machine. Throw the dough away when you are done.

      Push a small ball of dough through the cutting rollers three or four times. Toss the dough out when you are done.

    Making Pasta

      Twist the adjustment know until the flat rollers are opened as wide as possible. Begin passing a sheet of dough through the rollers while cranking the handle. Fold the dough in half before passing it through a second time and lightly cover with flour.

      Put the pasta through the widest opening six to eight times, while folding it in half each time. Lightly cover the dough with flour, so it does not become sticky.

      Decrease the spacing between the rollers by one notch. Roll the sheet of dough through the rollers one time.

      Diminish the space between the rollers one notch at a time, while rolling the lengthening sheet of dough through the rollers on each setting. Discontinue doing this until it reaches the desired thickness.

      Separate the sheet of dough in half after it is too long for you to work with. Allow the dough to sit for 10 minutes, so it firms up enough for you to cut.

      Connect the cutter attachment to the machine's body. Slide the handle into the slot of the chosen cutter.

      Lightly dust the sheet of dough to keep it from clinging to the cutter. Place the sheet of dough through the cutters with one hand while the other hand is turning the handle.

      Position the pasta on a flat surface or drying rack for up to one hour to dry before cooking.

Tips & Warnings

  • Wipe off the Imperia machine with a dry lint-free cloth following each use.

  • Add 1 or 2 drops of mineral oil where the ends of the rollers meet the machine's body. This will keep the rollers working smoothly.

  • Clean off excess flour left on the machine and its attachments with a soft brush.

  • Do not wash the Imperia machine or any of its attachments with water because they are made of steel and could rust.
