Wafer cookies are often a favorite, even if they have a dull color.

The sweet flavor of vanilla wafers is used in a variety of ways, from lining baking dishes for creating a sweet pie crust to sandwiching ice cream between them. The cookies are generally a dull tan color which belies their intense flavoring. To make the cookies more fun, the cookies can be colored before baking to create a rainbow of edible treats. Things You'll Need

  • Parchment paper
  • Baking sheet
  • Scissors
  • Vanilla wafer cookie recipe
  • Spatula
  • 4 to 5 small bowls
  • Food coloring, several different colors

Instructions

      Preheat the oven to the temperature required in the recipe.

      Measure out the parchment paper to a size that fits the baking sheet. Cut it to that size. Line the baking sheet with the paper.

      Mix the ingredients according to the recipe, combining them thoroughly. Divide the dough evenly between four to five bowls, depending on the amount of different colors you desire.

      Drop in two to five drops of one color of food coloring in a bowl -- the more drops you have, the richer the color will be. Repeat this with different colors in the other bowls.

      Mix each bowl thoroughly to incorporate the color completely.

      Spoon the dough on to the prepared baking sheet, 1 tsp. each or according to the recipe, ensuring there is space left between each cookie.

      Bake them for the alloted amount of time. Remove them and allow to cool completely before eating.

Tips & Warnings

  • Take two different cookies, place 1 to 2 tbsp. of ice cream between them and press them together to make a colorful ice cream sandwich.

  • Keep in mind that as the cookies bake, the dough and coloring lightens.

  • Be careful not to add more than a few drops of food coloring, as it can alter the ratio of ingredients to one another by adding more.
