How to Flash Freeze a Cake
Flash freezing a cake involves freezing it unwrapped in the freezer for only a short time. Once the cake hardens, you can then prepare it for the freezer. Bakers often flash freeze cakes because the firm surface makes it easier to apply icing later. After you flash freeze a cake, you can then store it in the freezer until you need to prepare or serve. Allow the baked cake to cool completely in the refrigerator.

Place the prepared cake onto a baking sheet.

Place the cake into the freezer. Freeze the cake until it becomes firm.

Remove the frozen cake from the baking sheet.

Wrap the frozen cake tightly in plastic wrap. Store the cake inside a cake box in the freezer for up to three months. If you do not have a cake box, wrap the cake in aluminum foil.

Thaw frozen cake in the refrigerator.
Icing that contains egg whites or cakes with cream fillings will not freeze well. Place the icing on the cake before you serve it for best results.
