How to Keep Brown Plantains Fresh
Plantains are similar in appearance to bananas. Plantains are harder to peel and cannot be eaten raw unless they are fully ripened and black. The fruit appears green in color, transforms to yellow with brown or black spots and then turns dark brown to black in color. Green plantains are starchier; yellow to brown plantains are slightly sweet; and almost black plantains are fully sweet. Storing the plantains properly will keep them fresh and full of flavor. Store the plantains uncovered at room temperature in a well-ventilated location.

Place them in a loosely closed brown paper bag for best results.

Turn the plantains over daily. The plantains may take up to 10 day to ripen completely.

Store the brown plantains until they turn black. Use the fully ripened plantains within three to four days.

Place the ripened plantains in the refrigerator to prolong the shelf life by up to five days.

Tips & Warnings
Slice the ends off the plantains and cut the skin horizontally. Peel the plantain under cool, running water.
Avoid purchasing plantains that are moldy, squishy or shriveled in appearance.
Keep plantains away from direct sunlight because it can cause them to spoil.
