How to Make Coconut Shrimps
Coconut shrimp is a classic dish that captures the light, fresh taste of the sea while also offering a deep-fried sweet side. The shrimp are coated with a special batter that the coconut flakes will stick to, and are then are deep fried until golden brown. Making coconut shrimp is much simpler than it sounds, even if you don't have a deep fryer. They don't take a long time and offer a flavor sure to please your taste buds. Does this Spark an idea?
Things You'll Need
- 1 cup flour
- Cayenne pepper
- Three bowls
- Two eggs
- 1 tbsp. buttermilk
- 2 cups shredded coconut
- 10 shrimps
- Canola oil
- Deep soup pot
- Food thermometer
- Spider or metal slotted serving spoon
- Large plate
- Paper towels

Combine a cup of all-purpose flour, a pinch of salt, a pinch of pepper, and a 1 tsp. of cayenne pepper in a bowl. Mix well.

Beat together two eggs and 1 tbsp. of buttermilk in a separate bowl until well combined.

Fill a third bowl with 1 1/2 cups shredded coconut flakes.

Pour 5 cups of canola oil into a deep soup pot. Clip a food thermometer to the side of the pot and raise the heat until the oil is 350 degrees F.

Batter up a shrimp by coating it in the flour mixture, then the egg and buttermilk mixture, then the shredded coconut. Place the shrimp on a spider or metal slotted spoon and place it into the hot oil.

Repeat the batter process with nine other shrimp. Each piece of shrimp should remain submerged in the hot oil for three minutes.

Remove the cooked shrimp from the hot oil with the spider or metal slotted spoon and transfer to a plate lined with paper towels.
