How to Cook a Whole 15 Pound New York Strip Loin

Preheat your oven to 250 F. Remove the roast from the refrigerator 1 hour before you plan to cook it. Season your roast the way you prefer.

Sear the roast in a hot skillet, turning it to sear all sides and seal in the natural juices of the meat. Place the roast in a roasting pan on a metal rack. Position the pan in the middle of the oven.

Cook the roast at 250 F for 25 minutes per pound, or 6.5 hours for medium-rare. Check the meat to be sure it reaches 140 F after it rests for 20 minutes.

Preheat the oven to 450 F. Remove the roast from the refrigerator 1 hour before cooking. Season your roast with your choice of flavorings.
