Fabled to have been carried from the Garden of Eden by Eve herself, the four-leaf clover is a widespread symbol of good luck. Bring some of the clover's luck to your wedding with a conventional three-tier white wedding cake, decorated with white icing four leaf clovers and topped with fondant clovers. Alternatively, go green and cover the cake in green fondant or buttercream icing, add green royal icing clovers to the cake and top the cake with the same green fondant clovers.   • Buttercream icing
  • Icing smoother
  • Wax paper
  • Vegetable shortening
  • Four-leaf clover stencils
  • Pastry bag
  • Round icing tip
  • Royal icing
  • Gum paste adhesive
  • Fondant
  • Four-leaf clover cookie cutters
  • Foam padding
  • Fondant ball tool

      Spread a thin layer of white or green buttercream icing on the cake and let the icing cool in the refrigerator for 20 to 30 minutes.

      Spread a thick layer of the same icing over the entire cake and use an icing smoother to make the sides and exposed tops of each tier completely smooth. Set the cake aside or place it back in the refrigerator until later.

      Lay out a sheet of wax paper on a clean working surface and cover it with a little bit of vegetable shortening. Place small four-leaf clover stencils on the paper.

      Fill a pastry bag with a small round icing tip with white or green royal icing.

      Fill in the stencils with the royal icing. Let the icing firm for 20 to 30 minutes and then remove the stencils. Leave the royal icing clovers to dry on the paper for at least 4 to 6 hours. You will require approximately 50 small stenciled clovers for a three-tier cake. If you do not have enough stencils, let the first batch dry for the 20 to 30 minutes and then make more on another sheet of wax paper.

      Paint a little bit of fondant or gum paste adhesive onto the back of each clover. Arrange them in random order on the cake. Use approximately 25 for the bottom tier, 15 for the middle tier and 10 for the top tier.

      Make fondant clovers. Roll out a package of fondant to a thickness of 1/8-inch. Use four-leaf clover cookie cutters of different sizes to cut out shapes from the fondant.

      Place each shape on a piece of foam padding. Use a ball tool to thin the edges of each clover by pressing the tool against the edges of the leaves gently. Let the clovers dry for 24 hours.

      Spread a little bit of the adhesive on the back of the clovers and arrange them in a random order on top of the cake.
