How to Prepare a Pizza Stone

Go easy on the dishwashing detergent when washing a pizza stone. Clean the pizza stone if it's new or if there's food on the surface from the last time it was used. Wet the stone with warm water. Add a few drops of dishwashing detergent and scrub the surface with a nylon mesh scrubber.

Rinse the pizza stone thoroughly to remove soap. Dry with a clean towel, then allow the stone to air dry completely.

Place the pizza stone in the oven before preheating it. Allow the stone to heat up with the oven to cook food evenly and prevent the stone from cracking.

Season the pizza stone over the course of using it the first few times by cooking greasy or oily foods on the stone, such as pizza, meat or cookies. As the food is cooking, some of the fat, grease or oil will be absorbed into the stone. Over time, this develops into a nonstick surface even as you wash and clean the pizza stone after each use.

Tips & Warnings
Clean the pizza stone to remove food particles stuck on the surface of the stone. Don't worry about oil stains or spots as these will naturally occur as the stone absorbs grease.
Never soak your pizza stone to clean it. The stone will absorb water, leading to damage.
