How to Make Vegan Gravy
As with many vegan or vegetarian dishes, this gravy is not a low-fat food, but it tastes pretty good. After all, fat is flavor. Yields about 2 c. gravy.

Things You'll Need
- 4 squashed and minced garlic cloves
- 3 slices yellow onion - chopped
- 2 c. water
- 1/2 tsp. salt
- 1/2 c. vegetable oil
- 1/2 tsp. sage
- 6 sliced white mushrooms
- 4 tbsp. reduced sodium soy sauce
- 1/2 c. all-purpose flour
- 1/4 tsp. ground black pepper
- 4 tsp. nutritional yeast
- Groceries
- Chef's Knives
- Saucepans
- Wire Whisks

Put the vegetable oil in a small saucepan.

Add the garlic and onion, and sauté for 2 minutes over medium-low heat until the onion is translucent.

Add the flour, yeast and soy sauce to make a paste.

Add the water gradually, stirring constantly.

Bring the gravy to a boil over medium-high heat, stirring constantly, until it thickens.

Add pepper and sliced mushrooms. Season to taste with salt.

If gravy is too thin, add flour in small amounts until it thickens. Use a wire whisk to eliminate lumps.

Tips & Warnings
Nutritional yeast can be found in health-food stores, if it's not at your supermarket.
"Vegan" means that no animal products, even dairy ones, are used.
