How to Cook Chicken on a Cedar Plank
While cedar planks were traditionally used in the northwest for cooking salmon, they can be used to cook a variety of meats and fish on the grill. Wood planks for cooking come in many types of wood, such as cherry, mesquite and cedar, and grilling with the help of a cedar plank can infuse the wood's rich, smoky flavor into your chicken. You can purchase cedar planks at specialty food stores and at some butchers, just make sure you get planks that are untreated. Does this Spark an idea?
Things You'll Need
- Untreated cedar planks
- Bricks
- Whole chicken cut-up
- Salt
- Pepper
- Grill
- Vegetable oil or nonstick spray
- Marinade
- Basting brush
- Meat thermometer
- Aluminum foil

Soak two untreated cedar planks in water in a sink for at least four hours. To keep the planks completely submerged, weigh them down with a brick or heavy jars.

Remove the cedar plants from the water. As they are drying, preheat your charcoal or gas grill to medium heat.

Brush the top of the cedar planks with vegetable oil. You can also spray the tops of the planks with a nonstick cooking spray.

Season the chicken with salt and pepper and put half of the chicken on one plank and half of the chicken on the other plank. You don't want the chicken to be crowded, so spread the pieces out evenly over the two planks.

Place the planks on the grates of the grill and close the grill lid.

After 30 minutes has passed, baste the chicken with the marinade.

Close the lid of the grill and continue to cook for up to an additional 45 minutes.

Remove the chicken from the cedar planks when a meat thermometer registers an internal temperature of approximately 150 degrees Fahrenheit. Place foil over the chicken and rest it for an additional 10 minutes. During this time, the temperature should continue to rise to approximately 160 degrees Fahrenheit, which is the recommended internal temperature for consuming chicken.
