How to Make Mashed Potato Pancakes
Though there are never leftover potatoes in my house, if you've got 'em, here's a way to use 'em. Recipe yield depends on how much leftover mashed potatoes you have. Does this Spark an idea?
Things You'll Need
- leftover mashed potatoes
- 2 tbsp. butter
- skillets
- about 1/2 c. all-purpose flour for dipping
- About 1/2 C. All-purpose Flour For Dipping
- Leftover Mashed Potatoes
- Skillets
Instructions

Dip the cakes lightly in flour and shake off any excess.

Melt butter in a skillet over medium heat until browned.

Tips & Warnings
Keeping the cakes small makes it less likely they'll fall apart. (They still taste good fallen apart, but they don't look as nice.)
Serve with ketchup or Tabasco sauce (or both).
You could even make a quick vegetarian meal of these by topping the cakes with sautéed mushrooms.

Fried up a couple, chopped sweet onion, cilantro, serrano pepper, some shredded cheese, a squeeze of lime, some hot sauce, in a flour tortilla. Pretty darn good, will definitely try again! -

Don't forget, a "loaded" version by mixing in sour cream, chopped fresh chives, shredded cheddar cheese, and bacon bits would be equally as satisfying as an appetizer or enough can make a quick lunch.. -

may sound crazy but we have 40+ for Thanksgiving & use all the leftovers on these the next day...cranberry sauces, gravy, cheeses, & try making them adding some sweet potatoes!! -
