Things You'll Need:
- leftover mashed potatoes
- 2 tbsp. butter
- skillets
- about 1/2 c. all-purpose flour for dipping
- About 1/2 C. All-purpose Flour For Dipping

Step 1
Shape leftover mashed potatoes into small, flat cakes, as you would ground meat for hamburgers.

Step 2
Dip the cakes lightly in flour and shake off any excess.

Step 3
Melt butter in a skillet over medium heat until browned.

Step 4
Add cakes, making sure not to crowd the pan, and brown on both sides. Cook in batches if necessary, and add more butter as needed.

Step 5
Serve warm.

on 11/19/2008 Don't forget, a "loaded" version by mixing in sour cream, chopped fresh chives, shredded cheddar cheese, and bacon bits would be equally as satisfying as an appetizer or enough can make a quick lunch..

on 11/18/2007 may sound crazy but we have 40+ for Thanksgiving & use all the leftovers on these the next day...cranberry sauces, gravy, cheeses, & try making them adding some sweet potatoes!!

on 11/22/2005 Add some onion powder or grated onion to the potatoes before you make the pancakes.Brown golden and serve with sour cream or applesauce. Yum!

on 11/22/2005 I scramble up a couple of eggs and mix them in with the potatoes. This helps the potatoes stick together while frying. Herbs (garlic, chives thyme, basil, oregano and/or paprika) are also a must!
