How to Make Turkey Fritters

Fat may not be that great for you, but hey, fat is flavor. And these fritters are packed with it. Yields 8 to 10 appetizer servings.

    • 1 1/2 tsp. salt
    • hot red pepper sauce
    • 1/4 tsp. ground cinnamon
    • lime wedges
    • vegetable oil
    • 1 tsp. dried thyme
    • 1 tbsp. fresh lemon juice
    • 1/4 tsp. allspice
    • 1 12-oz. bottle beer
    • 1 c. leftover turkey
    • 1/2 tsp. baking powder
    • 1/8 tsp. grated nutmeg
    • 1 1/2 c. all-purpose flour
    • 1/4 tsp. ground red pepper
    • 1/2 tsp. cracked black pepper

        Mix flour, baking powder, salt, dried thyme, black pepper, red pepper, allspice, cinnamon and nutmeg in a mixing bowl.

        Add beer and lemon juice, and stir until just blended.

        Add 1 c. minced leftover turkey.

        Heat 3 inches of vegetable oil in a deep, heavy pot over medium-high heat until it is 365 degrees F.

        Spoon 1/4 c. batter into the oil for each fritter. Make about three at a time so that the pot isn't crowded.

        Fry fritters for 3 minutes or until lightly browned, and turn over. Cook 1 more minute.

        Drain the fritters on paper towels.

        Serve warm with hot red pepper sauce and wedges of lime.

    Tips & Warnings

    • A frying thermometer is almost essential for deep-frying.

    • You can strain the oil afterwards and use it again (for frying only) if it hasn't gotten too dark.
