How to Pan-Fry Perch

Perch is a fresh-water game fish that is popular to cook and eat. There are many ways to prepare perch, but pan-frying allows you to easily and quickly create a crispy, fried delicacy. Not only is pan-frying an easily mastered technique, it is healthier than normal deep frying. Pan-frying perch is a easy, fast and relatively healthy way to cook perch. Things You'll Need

  • Perch fillets
  • Iron skillet
  • Small bowls
  • Milk
  • Flour
  • Cornmeal
  • Slotted spoon
  • Paper towels
  • Olive oil

Instructions

    • 1

      Pour milk in one small bowl. Pour the flour, cornmeal, salt and pepper in another bowl. Mix the dry ingredients together in the bowl.

      Lay out the perch fillets on paper towels. Rub towels over fillets to get excess moisture off of the perch fillets.

      Pour 1/2 inch of olive oil into the iron skillet. Set the skillet on a stove top burner, and turn the temperature up to medium high.

      Put perch fillets in the milk for 10 seconds. Remove the fillets and dredge both sides through the flour mixture. Coat the fillets completely.

      Add the fillets to the heated skillet, and fry them until each side is golden brown. Remove fillets from the skillet with a slotted spoon and place on paper towels. Dab with towels to drain excess oil off of the fillets.

Tips & Warnings

  • If the perch fillets are wild-caught, you can get rid of the fishy after taste by soaking the fillets in ice water for 10 minutes.

  • Watch the oil on the skillet carefully, if it starts to smoke heavily, remove the skillet from the stove and turn the heat down. If your oil is too hot when you add the perch it can burn you.
