Cake decorators use green icing or gel to pipe edible "grass" onto golf, Easter or garden-themed cakes and cupcakes. Adding grass to a cake design adds textural interest, complements spring themes and makes your desserts look impressive with relatively little effort or artistic expertise. Does this Spark an idea?

  • Frosting or gel
  • Green food coloring
  • Pastry bag
  • No. 2 round decorating tip
  • No. 42, 89 or 134 multi-opening decorating tip

Instructions

      Ice your cake normally, unless you wish to use the textured grass icing as your base.

      Add a few drops of green food coloring to white frosting to make it green. You may also use green cake gel.

      Fill a pastry bag with the green frosting. Fit the bag with the appropriate decorating tip: a No. 2 round tip creates a single, round line. To cut down on labor time for larger cakes, try a No. 42, 82 or 134 multi-opening tip, which dispenses two, three or five lines, respectively.

      Squeeze the pastry bag over the cake's surface gently to dispense frosting. Pipe the grass neatly in one direction with short strokes for a clean appearance, or pipe it in multiple directions with short strokes for a more haphazard or playful appearance.
