Asparagus is a nutrient-rich vegetable that is particularly high in vitamins A, C and K. You can grill asparagus as a side dish for barbecued foods. Wrapping asparagus in a tinfoil pouch allows it to cook in a marinade over the grill. The foil also protects the texture of the asparagus, preventing it from sticking to the grill or falling apart.   • Lemon
  • 3 tbsp. olive oil
  • 2 garlic cloves
  • Salt

      Preheat your grill. Wash the asparagus spears under cold water to remove dirt and pat dry with a paper towel. Snap off the bottom of each asparagus spear with your hands. This area of the vegetable has a thick texture that does not cook down and produces a bitter flavor.

      Create a marinade. Cut one lemon in half and remove the seeds. Squeeze the juice from both halves of the lemon into a bow. Mince two garlic cloves, and place the garlic into the bowl. Sprinkle salt and pepper into the bowl. Stir the mixture with a spoon.

      Lay a large piece of tinfoil on a flat surface. Place the spears of asparagus side by side on the tin foil so they do not overlap. Brush both sides of the asparagus spears with the marinade, using a pastry brush to coat them.

      Wrap the tinfoil up and around the spears so they continue to lay side by side within the foil. Place the tinfoil containing the asparagus onto the grill. Grill each side for five minutes until the asparagus becomes tender.

      Unwrap the tinfoil and place the asparagus directly on the grill for one to two minutes to create a char flavor and grill lines, if desired. Remove the asparagus spears from the grill with tongs and plate them.
