With its shiny purple color and giant oval shape, eggplant is a unique vegetable that can be used in a variety of recipes. Beneath their attractive purple skin, eggplants have a white, spongy flesh that is versatile enough to be used in a wide variety of recipes. Common eggplant dishes include eggplant Parmesan, grilled eggplant salad, and baba ghanoush, which is an eggplant spread. Some recipes call for eggplant to be sliced very thin.   • Cutting board
  • Sharp large knife

Instructions

      Place the eggplant down on a clean cutting board.

      Slice off the stem and the rounded bottom so that you can stand the eggplant upright.

      Peel the eggplant if the recipe requires, but you can keep the skin on.

      Slice down the length of the eggplant as thinly as possible for long strips of eggplant. If you prefer shorter slices, lay the eggplant down and thinly slice across from one end to the other.

Tips & Warnings

  • Smaller eggplants tend to be better to cook with because their flesh is more tender than bigger eggplants.
