How to Broil Salmon Cakes
Salmon cakes respond to several cooking methods, including baking, frying and broiling. Broiling uses high heat -- approximately 550 degrees Fahrenheit -- to cook food, which can quickly dry out the fragile salmon cakes. Including a binder and emulsifier, such as mayonnaise, allows the salmon to withstand the aggressive heat of the broiler. Broiling has several advantages over baking: The direct heat of the broiler browns the surface of the cakes remarkably well, and allows for shorter cooking times. Does this Spark an idea?
Things You'll Need
- 2 oz. day-old crusty bread, such as Italian
- 7 oz. salmon
- 1 tbsp. chopped chives
- 1 tbsp. mayonnaise
- 2 tbsp. chopped green bell pepper
- 1/2 tbsp. freshly ground black pepper
- 1 tsp. fresh chopped dill
- 1/2 tsp. kosher salt
- 1 tsp. melted butter

Pulse 2 oz. of day-crusty bread or saltine crackers in a food processor into fine crumbs. Place the crumbs in a mixing bowl, add 7 oz. salmon, 1 tbsp. chopped chives and 1 tbsp. mayonnaise, 2 tbsp. green bell pepper, 1/2 tbsp. freshly ground black pepper, 1 tsp. fresh chopped dill, 1/2 tsp. kosher salt and mix well. Place the oven rack on the highest level, or 4 or 5 inches from the broiler.

Heat the broiler. Form the salmon mixture into two equal-sized cakes and lightly oil a sheet pan. Place the salmon cakes on the sheet pan and drizzle 1/2 tsp. melted butter on each. Place the salmon cakes in the oven.

Broil the salmon for 10 minutes or until golden brown on top.
