How to Use the Chef'sChoice Sharpener 100
The Chef'sChoice 100 series electric knife sharpener uses diamond-coated disks and magnetic guides to sharpen the edge of kitchen, hunting, fishing and pocketknives. It can be used with both serrated and non-serrated knives, and has slots for very dull knives, medium-dull knives, and a polishing disk for re-sharpening knives. Does this Spark an idea?

Practice sharpening a knife before turning on the knife sharpener. Insert the blade into the left side of the first slot with the edge down. Hold the knife so it matches the angle of the slot and pull it slowly toward you. You will feel a slight pull as you slide the knife through the slot. The springs in the slot keep the knife in the proper position. Do the same in the right side of the first slot.

Plug the power cord into a GFCI outlet and turn on the power button. You will hear the motor running.

Insert your knife into the left side of the first slot. Hold the knife at a slight angle, but do not bend it as you pull it through the slot. When the blade makes contact with the diamond disk you will hear a slight grinding noise as the disk sharpens the knife edge. Insert the knife in the right side of the first slot and sharpen it in the same manner. Repeat the entire procedure for both sides.

Insert your knife into the second slot as you did with the first slot, starting with the left side, then moving the knife to the right side. Repeat this procedure one more time.

Insert your knife into the third slot as you did with the previous two slots. This step polishes the blade.

Carefully and gently touch the blade edge to see if there are any burrs and bumps in it. If there are, run the blade through the polishing slot as you did before to remove the burr.

Tips & Warnings
Knives should be sharpened regularly; usually after a few weeks of use.
Take care not to cut your finger when testing for burrs. The edge of the knife will be razor sharp after sharpening it.
