How to Fix the Appearance of a Baked Apple Pie
When baking an apple pie from scratch you have to rely on the crust of the recipe to come out properly in order for the pie to have a nice appearance. Several problems can arise when baking an apple pie, such as a pale crust that did not brown properly, or a cracked crust within the top decorative portion of the pie. How to Fix the Appearance of a Baked Apple Pie With Lattice

Preheat your oven to 450 degrees F. Since the apple pie has already been baked inside you will just be repairing the appearance. To do this you will want to bake the top repaired portion of the pie quickly, and at a high heat.

Make an extra batch of pie crust dough. You should use the same recipe you used originally, however this time you won't need as much. Cut the ingredient amounts in half and make only half of a batch of dough.

Roll the dough into a thin sheet about 1/4 of an inch thick.
Cut the dough into strips that are the same thickness as the ones you already baked on the top lattice of the apple pie. You are going to use these pieces to improve the appearance of the lattice on the top of the pie. This will cover any cracks.

Find the sections of the pie crust that need to be repaired. You will find the most cracking on the edges of the pie where the bottom layer of crust meets and attaches to the top lattice. Cut small pieces from the strips of dough that are about 2 to 3 inches long.

Pinch the dough pieces to the existing baked apple pie crust one at a time so it is covering the cracked portions. Pinch the dough and secure around the edges of each piece instead of push downward. Pushing the dough down into the pie could cause further cracking of the crust.

Beat together two eggs and 2 tbsp. of water to make an egg wash for the pie. If you made an egg wash on the pie the first time you baked it, you can do it again. The new wash will brown the new pieces of dough on the pie, as well as correct any part of the pie that was too pale.

Brush the egg wash mixture generously onto the crust of the baked apple pie.

Bake the pie at 450 degrees F for approximately 15 more minutes. Watch the pie closely to make sure you do not burn the top crust.

Remove the apple pie from the oven and let it cool before serving. This will allow for the old and new crust pieces to harden together as they cool.

Tips & Warnings
If you need to repair a baked apple pie that has a solid crust top that cracked during the baking process you can create a lattice crust on the top of the pie over the crust. Brush with an egg wash and bake it in an oven preheated to 450 degrees F until it is brown.
