How to Store and Freeze Sundried Tomatoes

Sundried tomatoes can stay fresh and flavorful when they are packed in a jar with olive oil. Not only does the olive oil enhance the taste and texture of the sundried tomatoes, but the oil in the jar is delicious when drizzled over steamed vegetables. Frozen sundried tomatoes will keep for 8 to 12 months and jarred sundried tomatoes will last up to a year before opening and up to 6 months after you open the jar. You can also store unopened sun dried tomatoes for up to 9 months in your cupboards.

Freezing Sundried Tomatoes

Place the sundried tomatoes in small freezer bags.

Pack the tomatoes in the bags tightly and press the bag as you add pieces to remove as much air as possible.

Seal the bag and place it in the freezer.

Storing Sundried Tomatoes in Jars

Sterilize the canning jars in a dishwasher or a boiling water bath.

Add the sundried tomatoes to the canning jars and fill to the top with olive oil.

Add a sprig of basil if you desire. This will add extra flavor to the tomatoes.

Seal the jars and keep them refrigerated until you are ready to use the sundried tomatoes.
