Cereal covered fried ice cream is an impressive dessert.

It's difficult to have bowl of cereal and not add milk, but you probably wouldn't think of having a bowl of ice cream and adding cereal. You could simply sprinkle the cereal on the ice cream. Go a few steps further and make ice cream balls covered with cereal. The crunch of the cereal is a counterpoint to the smoothness of the ice cream. Vary the flavors and the cereals you use. Make a batch and freeze for an afternoon snack. Use granola, add a fruit topping and serve for dessert. Does this Spark an idea?

Things You'll Need

  • Ice cream scoop, small
  • Cookie tray
  • Bowl
  • Resealable plastic food storage bags
  • Crushed Nuts
  • Beaten egg
  • Flaked corn cereal
  • Deep fryer

Instructions

      Take the ice cream out of the freezer until it is still very firm but you're able to scoop it with an ice cream scoop.

      Scoop out balls of ice cream. Put them back in the freezer on a cookie tray so they don't melt while you continue scooping out as many balls as desired. A small scoop results in smaller balls which makes less of hassle to cover with cereal.

      Pour the cereal into a bowl that's big enough for you to roll the ice cream balls around.

      Put an ice cream ball into the bowl. Roll it around in the cereal pressing on the ball so the cereal sticks. Eat immediately or refreeze.

      Store in resealable plastic food bags. Lay the cereal coated ice cream balls in a single layer. Don't stack them in the bag.

    Fried

      Make the ice cream balls. Roll the ice cream balls in the crushed nuts. Return to the freezer overnight. The ice cream must be frozen hard.

      Dip the ice cream balls into the beaten egg and then into the flaked corn cereal. Return to the freezer for a minimum of three hours, overnight is better.

      Turn on the deep fryer to 375 Fahrenheit. Put the ice cream balls directly from the freezer into the fryer. Fry for 20 seconds. Remove and serve immediately.

Tips & Warnings

  • If the ice cream comes in a square container, cut 2 inch-thick slices. Cut that slice in quarters. Push the quarters into the cereal to coat all four sides.

  • Use crushed nuts, mini chocolate chips or coconut to coat the ice cream instead of cereal.

  • Put small ice cream balls on craft sticks like those used for frozen treats.

  • Work fast before the ice cream starts melting. It has to be soft enough for the cereal to stick to it, but if it melts too much, the cereal will melt off.
