How to Make Soft Ice Cream

Creating soft ice cream requires a delicate cooking process. It's crucial that the mixture gets very hot but doesn't boil.   • 1 cup whipping cream
  • 1 cup sugar
  • 2 tbsp. fruit preserves of choice

      Cut a vanilla bean in half down the middle using a sharp knife. Open the vanilla bean and use the knife to scrape out the contents.

      Place the vanilla pulp and the bean casings in a medium saucepan, along with 2 cups of half-and-half, 1 cup of whipping cream, and 1 cup of sugar. You can also add 2 tbsp. of the fruit preserves of your choice if you wish.

      Stir the mixture well and attach a candy thermometer to the side of the pan.

      Heat the mixture on the stove until it reaches 170 degrees F. Stir the mixture slowly as it heats.

      Remove the mixture from the heat and allow to cool. Remove the vanilla bean casings and store the mixture overnight in the refrigerator.

      Pour the cold mixture into your ice cream machine and turn it on according to the instructions of the specific model. Even a regular ice cream maker will produce soft ice cream with this recipe.

      Watch the ice cream as it expands. When it has expanded three quarters of the way, remove it from the machine with a spatula and transfer to a large lidded container.
