Measuring sweet potatoes can be a tricky process, because sweet potatoes come in different sizes and it can be difficult to identify how many potatoes or cans to purchase for any given recipe. Luckily, Texas A&M University has a handy chart for identifying the approximant amount of mashed potato in a can or in an individual potato. Typically, one potato is equal to about ½ to one cup of mashed potato, and one pound cans of sweet potatoes have about two cups of mashed potatoes. Use the guide when purchasing potatoes and always measure the potatoes using the same method for best results.

Wash the potatoes with a vegetable brush to remove all dirt. Place the potatoes in a baking pan. Cook the potatoes in the oven at 400 degrees for about an hour and a half. You can cook the potatoes directly on the oven rack, but they will probably leak potato juice on the floor of the oven, which can be a pain to clean.
Allow the potatoes to cool. This typically takes two or three hours. Remove the peel and discard. Usually you can simply pull the skin off by hand after the potatoes are cooked and soft.
Mash the potatoes with the potato masher until there are no lumps.
Scoop the mashed potatoes into a measuring cup to measure. Typically, one sweet potato will have about ½ a cup of mashed potato. Larger potatoes may have up to two cups. Push the potato down into the measuring cup with the spatula to eliminate air pockets. If you leave the air pockets, the measurements will be off and your recipe may fail or have a completely different texture.
