Sanitation
-
1
Sanitize all of the equipment. Whether it's the first time you're using Mr. Beer, or the fiftieth, you must sanitize the instruments each time.
-
2
Use the "4-quart" mark on the back of the barrel to fill it with lukewarm water. Add half of one of the sanitation packs, put the lid on and swirl the barrel.
-
-
3
Use the tap on the barrel to pour some of the sanitation water into a bowl, which will hold the sanitized utensils afterwards.
-
4
Place the measuring cup, metal spoon or whisk and can opener into the barrel and soak for about 10 minutes.
-
5
Place the utensils into the sanitized bowl and drain the water out of the barrel. Do not rinse the utensils or barrel.
Brewing
-
6
Fill the barrel with cold water up to the "4-quart" mark.
-
7
Remove the yeast from the beer mix can and place the unopened can in hot water. This will loosen up the contents of the malt for easier extraction from the can.
-
8
Using your measuring cup, measure 4 cups of water into the pot. Slowly empty the booster into the water while stirring and bring to a boil.
-
9
Remove from heat and stir in the beer mix. Pour this mixture into the barrel.
-
10
Fill the barrel with cold water to the "8.5-quart" mark. Stir vigorously until mixed well.
-
11
Pour in the yeast and mix once more. Let the mixture sit for about five minutes and then stir once more.
-
12
Screw the lid on and put in a cool, dark place. Let the barrel sit for at least seven days, but up to 14 days.
Bottling
-
13
Pour the rest of the sanitation packet into 1 gallon of water. Mix well. Pour the sanitation mixture into each bottle, filling them about half full. Cap and shake them all vigorously. Let them soak for about 10 minutes before emptying them. It is not necessary to rinse them afterwards.
-
14
Add sugar to your bottles. For a 12 oz. bottle, add ¾ of a tsp. For a 16 oz. bottle, add 1 tsp.; for a 20 oz. bottle, 1 ¼ teaspoon.; for a 22 oz bottle, 1 ½ tsp. A 1 liter or 1 quart bottle gets 2 ½ tsps. For a 2 liter bottle, add 1 ½ tbsps., and for a 3 liter bottle, add 2 ¼ tbsps.
-
15
Fill each bottle with the contents of the barrel. Hold the bottle at an angle and fill from the tap of the barrel. Leave about 2 ½ inches from the top.
-
16
Cap the bottles and invert the bottles several times to mix the sugar. Put the bottles in a cool dark place. Ensure they are all upright. Leave the bottles sit for seven to 14 days.
-
17
Condition the beer bottles. After the previous step, you can technically drink the beer. However, for a better flavor, leave the beer sit for several more weeks. This can be done in a cool or warm place.
-
18
Chill beer for at least two days before consuming.
