You have several opportunities to stop the restore on an iTouch.

If you have accidentally hit the "restore" button on your iPod Touch, there is no need to panic. Restoring your iTouch will delete all the data on it, but Apple gives you several opportunities to stop it before this happens. Even if you miss the first two prominent stopping opportunities, there is a third if you act fast.

      Hit "Cancel" at the window that asks if you wish to back up your settings. If this window has already passed, read on.

      Hit "Cancel" at the window that asks if you are sure you wish to continue. If this window has already passed, read on.

      Hit the little grey "x" on the right side of the iTunes display window. Even if you missed the first two opportunities to cancel, you will likely have 10 to 20 seconds (depending on your computer screen) to cancel the restore process while it is starting up.
