How to Cut an Eggplant Into Moons
Eggplant is a low-calorie, low-fat source of vitamins and minerals including vitamins B6, C and K, potassium, manganese and folate. You can grill, bake or fry eggplant for side dishes and pizza toppings or main courses such as eggplant parmesan, eggplant rollatini and eggplant caponata. Cut an eggplant into thin moon or half-moon shapes to fulfill recipe requirements for fried eggplant or recipes that require stacking ingredients like sauce and cheese, as in eggplant parmesan or eggplant sandwiches. Wash the eggplant under cold water. Place the eggplant horizontally on a cutting board and pat it dry with a paper towel.

Cut the stem of the eggplant off using a serrated knife. Peel the purple skin off the outside of the eggplant with a vegetable peeler. Discard the skin.

Cut 1/2-inch-thick slices horizontally from one end of the eggplant to the other to create whole moons. To create half-moon pieces, cut the eggplant in half vertically. Place each half cut-side down and slice 1/2-inch-thick pieces from one end to the other.

Tips & Warnings
The flesh of eggplant will start to brown when in it comes into contact with air. Cook eggplant immediately after cutting.
