How to Put Okra in the Freezer
African in origin, the okra plant is part of the mallow family and grows large pods containing small white seeds. These edible pods produce a gelatinous substance when cooked. Because of this, pods are either cooked quickly by frying or mixed with acidic ingredients such as citrus fruits or tomatoes. If you bought a fresh quantity of okra and you don't have time to prepare it, consider freezing it for later. Blanching the okra will protect the integrity of the flesh and flavor of this vegetable. Things You'll Need
- Cutting board
- Sharp knife
- Large pot
- Large bowl
- Plastic freezer bags
- Paper towels

Choose small pods. The smaller pods will taste better than the larger pods. Rinse the pods in cold water.

Place the pods on a cutting board. Trim off the stems with a sharp knife. Do not cut into the seed cell, which will expose the inner part of the okra.

Fill a large pot and a large bowl with water. Place the pot over high heat on the stove, and fill the bowl with ice.

Blanch the okra. When the water reaches a rolling boil, add the okra and boil for 3 minutes.

Drain the okra out in the colander. Pour the okra into the bowl of ice water and let them cool. Drain the okra again.

Place the blanched okra into plastic freezer bags, squeeze out all of the air and seal. Put the okra in a deep freezer for up to a year.

Tips & Warnings
Prevent extra water from freezing with the okra by drying each piece with a paper towel before freezing.
Do not use or consume shriveled or limp okra.
