How to Make Filipino Desserts
Filipino desserts can make for an exotic dish to serve your guests during a dinner party or just something new to try when baking. Many Filipino desserts are made from rice and coconuts as the Philippines are a tropical oriental country. One popular dessert is bibingka cassava, which is a hot rice cake typically served with various toppings. Another popular dessert is kuchinta (also known as kutsinta), which is a brown rice cake. Things You'll Need
- 3 cup grated cassava
- 1-1/2 cup coconut milk
- 1-1/2 tbsps. melted butter or margarine
- 2 eggs
- 2 cup sugar
- 3/4 tbsp. fine salt
- 1/3 cup coconut cream
- 1 1/2 cups water
- 1 cup rice flour
- 1 teaspoon lye solution
- 9-by-9 inch baking pan

How to Make Bibingka Cassava

Preheat the oven to 350 degrees Fahrenheit.

Beat two eggs. Add one and a half cups sugar, 3/4 tbsp.fine salt and one and a half tablespoons of melted butter or margarine. Add 1 1/2 cups coconut milk and 3 cups grated cassava and mix everything together.

Place the mixture into a 9-by-9 inch baking pan lined with a greased cooking sheet. Insert the pan into the oven once it's reached 350 degrees Fahrenheit and bake for 60 minutes or until toothpick inserted into cake comes out clean.

Brush the top of the cake with coconut milk five once the top has started to brown. Put the cake back into the oven and allow it to cook until the top is golden brown.
How to Make Kuchinta

Mix together three-fourths cup of sugar with 1 tsp. lye solution and 1 1/2 cups water. Bring the mixture to a boil. Allow the mixture to cool, which can take up to an hour.

Add one cup of rice flour to the cooled mixture and stir until smooth. Pour mixture into a muffin pan until halfway full.

Steam the muffin pan in a large pan with a cover that has two inches of water. Steam for 30 minutes or until a toothpick is inserted and comes out clean.

Remove cakes from the muffin pan and serve with grated coconut.
