Pancakes are easy to prepare as a quick breakfast meal or as an anytime snack. You can prepare several interesting pancake variations by mixing cheese or sweetened fruits -- all of which increase the fat content of pancakes. You can still enjoy a hearty pancake and significantly reduce its calorie and fat content by using applesauce instead of oil to prepare it.       Use unsweetened applesauce as a substitute for the oil. Replace the oil with an equal proportion of unsweetened applesauce in your pancake batter. For instance, if the pancake recipe calls for 1 tbsp. of olive oil, use 1 tbsp. of applesauce instead.

      Mix the dry ingredients and wet ingredients separately. Combine dry ingredients such as flour, baking soda, sugar and salt in a separate bowl. Whisk the wet ingredients including milk or buttermilk, eggs and applesauce in another bowl with a fork or electric beater until smooth. Mix the dry and wet ingredients together only when you are ready to cook the pancakes. This will prevent gluten from forming, as a result of prolonged contact of the flour with the liquid.

      Serve the prepared pancake with a fruit-based topping, such as blueberry jam or any jam of your choice. Applesauce lends a mild flavor to pancakes. You can also make up for the bland flavor by adding 2 tbsp. of fruit purees and ¼ tsp. of cinnamon to the pancake batter.
