How to Measure Dried Vs. Fresh Mushrooms

When you set out to make a mushroom-infused entree, side dish, or appetizer, you might want to experiment with substituting fresh mushrooms for dried mushrooms or vice versa. It is often easier to find more flavorful mushrooms, such as oyster mushrooms, in dried form rather than fresh. Substituting dried mushrooms for their fresh counterparts is quite simple; the general rule of thumb is that one pound of fresh mushrooms is equivalent to 3 oz. of dried, dehydrated mushrooms.

  • Weigh the dried mushrooms (or simply look at the measurement on the outside of the package of dried mushrooms). One pound of fresh mushrooms is equivalent to just 3 oz. of dried mushrooms.

  • Soak the dried mushrooms in water for at least one hour, or as recommended on the package.

  • Remove the mushrooms from the liquid once they are fully moist and springy to the touch.

  • Reserve the mushroom liquid and use in soups or risotto.
