How to BBQ Butterflied Shrimp
Shrimp is a versatile seafood which can be baked, boiled, fried or pan-cooked. There are several other ways in which shrimp can be prepared, but during the summertime shrimp will find itself on many American grills. Shrimp does not require much time to barbecue and can be skewered, cooked in the shell and out of the shell. Butterflying the shrimp allows it to cook quickly. This is not a problem with smaller shrimp, but when the shrimp are grilled it is best to use the extra large or jumbo sizes. Does this Spark an idea?

Pull the legs off of the shrimp.

Remove the shell from the shrimp. Hold the tail of the shrimp and peel the shell away from the body. He shell should peel away easily. If not, you can use a knife to cut the shrimp along the outer curve. Don't make a deep cut, just enough to penetrate the shell.

Cut along the outer curve of the shrimp starting with the tail. The cut should not go all the way through the shrimp. Cut as deep as possible without cutting it in half. You will see a dark string along the outer curve of the shrimp as you cut it. Place the tip of the knife under the string and remove it. The string is the intestinal tract and should be removed.

Peel the shrimp apart to create the butterfly effect. Do not peel so hard that the two pieces come unattached to each other.

Rinse the shrimp in cold water.

Marinate the shrimp as desired. Prepare the grill.

Place the shrimp onto the grill and cook for two to three minutes on each side. Don't overcook. The shrimp will continue to cook after they are removed from the grill.

Remove the shrimp and serve.
