How to Harvest and Store Shallots

Shallots have gained a reputation as the aristocrats of the onion family, which probably accounts for their high price at the supermarket. Heaven knows it's not their finicky nature; they're as easy to grow as any other bulb. Their delicate flavor - a sort of cross between onions, garlic and scallions - adds distinction to anything from hearty casseroles to egg salad sandwiches.

Things You'll Need:

  • Baskets
  • Garden Trowels
  • Gardening Gloves
  • Balls Of String
  • Baskets
  1. Step 1

    Begin harvesting the green tops about 30 days after planting - sooner if they're tall enough - and use them as you would the tops of chives or scallion in salads, soups or stews.

  2. Step 2

    Start digging and using green bulblets 45 days or so after planting.

  3. Step 3

    Harvest mature bulbs when the tops wither and turn brown.

  4. Step 4

    Braid the tops and hang the bulbs to dry, or store them in mesh bags in a cool, dry place as you would onions.

Tips & Warnings
  • Dig up shallots with care; like other members of the onion family, they'll rot quickly if their bulbs are damaged.
