How to Juice Beet Stalks
Beet stalks,or beet greens, have many health benefits. The vegetable is an anti-inflammatory, is high in anti-oxidants, and is a strong cleanser for the kidneys and blood. However, beet stalk contains oxalic acid which can irritate sensitive stomachs. Consequently, making a tasty juice requires mixing the greens with another type of vegetable juice. Check that you beet and beet stalks are fresh. Check that the stalks are not soft or shrivelled, as they are past their best. If the stalks are not tender or bright green in color then do not eat them. The beet flesh should be soft

Wash the beet and beet stalks using water. Often when they are bought, the vegetable contains mud or soil. This is best not to include the mud in the juice.

Steam the beet flesh first, so that it is cooked and has a more pleasant flavor. Chop up the beet into small cubes, and add it to a pan containing 1/2 inch of boiling water. Cover the pan, and allow the water to boil and steam the beet for 10 minutes.

Slice up the stalk or greens, then add to the pan for five minutes. This softens the stalks to make the juice more tastier. Drain the ingredients from the pan, and leave to cool. Keep the water as it contains many beet nutrients.

Juice the beet, and then the stalk. Push them through the juicer so that the liquid is extracted.

Remove the juice from the juicer, and put it in a jug. Then, add one cup of carrot juice and the water you drained from the steaming process to dilute it. The beet greens and flesh need to be diluted so that they can be digested more easily without causing irritation to the digestive system.

Pour the juice into a glass and drink.

Tips & Warnings
Consider using apples or cucumbers in the beet juice drink.
Add 1 tsp. of lemon juice to give you beet stalk juice a zesty tang.
Do not mix beet stalk juice with brocolli or other vegetables high in calcium, as this combination cannot be digested easily.
