Putting together your favorite mixture of spices and forming patties out of the raw meat can occasionally fall apart during cooking. Make sure your next batch of burgers don't fall apart on the grill or in the skillet by adding binding agents to help them keep their shape. Things You'll Need

  • Large mixing bowl
  • Cutting board
  • Sharp knife
  • White onion
  • Measuring spoons
  • Ground black pepper
  • Salt
  • Worcestershire sauce
  • Chili powder
  • Eggs
  • Measuring cups
  • Breadcrumbs
  • Baking sheet
  • Green bell pepper
  • Corn
  • Hot sauce

Instructions

      Place 1 lb. of raw ground chuck or sirloin in a large mixing bowl.

      Finely chop 1/2 of a medium-size, white onion with a sharp knife on a cutting board. Add the onion to the meat.

      Measure 1 tsp. each of ground black pepper and celery salt, 1 tbsp. of Worcestershire sauce and 1/2 tsp. of chili powder and place it in the mixing bowl. Add two large eggs and 1/4 cup of finely ground breadcrumbs.

      Wash your hands thoroughly with soap and water. Mix the ingredients together with your hands, thoroughly distributing the eggs and breadcrumbs throughout the meat mixture. These ingredients will keep your meat together.

      Divide the meat into four portions. Use your hands to shape the meat into patties. Place the patties on a baking sheet until you are ready to cook them.

      Cook burgers four minutes on each side over medium-high heat to reach medium-rare on a skillet or grill. Add another one minute per side to reach medium, and another two minutes per side to reach well-done.

Tips & Warnings

  • Add chopped green bell pepper, corn and hot sauce for a Southwestern-flavored burger. Use more breadcrumbs if the burgers seem too wet. Put in 1 tbsp. of water at a time to a dry beef mixture.
