1
Review the recipe if the dough is not cooperating. Sometimes you may have missed an ingredient that still must be incorporated. Classic ingredients that are easy to miss but are very necessary include oil and cream of tartar.
-
2
Rub some canola or vegetable oil onto your rolling pin if the dough is sticking. Dry wood will absorb the moisture from the dough, picking up the dough along with it.

3
Move the dough back into the refrigerator if the scraps are becoming too soft. Remember that most doughs must be cold to properly roll.
-
4
Bake the cookies on the center rack of your oven and set the timer for the shortest recommended cooking time. This ensures that the cookies will cook evenly and not burn. If they cookies are not done at the shortest time, then check the cookies every two minutes after that.
-
5
Remove the cookies immediately from the cookie sheet and place on a rack, as the cookies will keep baking on the hot cookie sheet.
-
6
Avoid stacking cookies on the cooling rack, as it will cause the cookies to be deformed.
