How to Carve a Train Cake
No children's party is complete without a cake, but shop bought novelty cakes can be expensive. This simple train cake is suitable for boys or girls and is simple to assemble, even for those with no cooking experience.Personalise the train by filling the carriages with little presents instead of sweets, using your child's favorite color or adding a name to side of the engine. Things You'll Need
- 1 plain cake, 8 square-inches
- 1 Swiss roll
- Knife
- Chopping board
- Apricot jam
- Microwave
- Pastry brush
- 1 1/4 lb. ready rolled black sugar paste
- 2 1/4 lb. ready rolled green sugar paste
- 1 1/4 lb. ready rolled red sugar paste
- 4 oz white ready rolled sugar paste
- Fish slice
- Sweets
- Cake candles (optional)

Cut the edges off the square cake, then cut it in half vertically, putting half to one side. Warm a little apricot jam and brush it over the cake, then cover it with black sugar paste. List the sugar paste into position with a fish slice if necessary. Trim off any excess.Cut the Swiss roll in half vertically, brush it with jam and cover it with green sugar paste. Position it on top of the black base, flush with one short edge. Cut a square from the remaining square cake and cover it with red sugarpaste. Stand it up behind the Swiss roll to form the cabin of the engine.

Cut a smaller piece to form a base for the remaining half Swiss roll. Coat square cake with jam and cover it with black sugar paste as before. Cover the Swiss roll in green sugar paste and position it on the base, brushing with jam before each addition.
Trim the remaining piece of square cake into a rectangle, and carefully hollow it out. Cover it with green sugar paste.Use the remaining sugar paste to decorate the train.

Cut out circles of black sugar paste and stick them to the sides of the carriages with jam to form wheels.Cut windows from white sugar paste, and add them to the sides of the engine cabin and carriage.
Roll a small rectangle of black sugar paste into a funnel and add it to the top of the engine. Add small circles of white sugar paste for buffers.
Fill the open carriage with sweets, and stick candles into the top of the engine.

Tips & Warnings
Keep warming the jam periodically in the microwave to make it easy to use.
Add edible cake decorations for an individual look.
Take care when cutting in case the knife slips.
