Create your ganache with equal weights of cream and chocolate, ensuring that the chocolate is melted thoroughly. Add a small amount of butter to the finished product to increase the shine, if desired. Pour it over the top of your cake while it is still smooth, warm and thin.

Maneuver a spatula made of metal, plastic or silicone to spread it from the center of the cake toward the outer edges. Work in a circular motion, forcing the ganache evenly toward the outer circumference of the cake.

Hold the spatula or icing spreader upright against the side of the cake, in the ganache that pours over the edges. Place the back of the spatula in the bowl of ganache for extra coverage if needed. Spin the cake or work around the outer edges to smooth the ganache layer.

Finish the ganache with decorative elements such as toasted coconut or sliced fruit.
