Vinaigrette for Flank Steak Salad
Many people prefer dressing on their salads for extra flavor. A vinaigrette is a combination of vinegar, oil and a third component that helps hold the two together. Lighter than typical bottled dressings, vinaigrettes are often made fresh with ingredients found in just about any grocery store. Not just for salads, vinaigrettes can also be used as marinades or sauces on meats, such as flank steak, which is lean and tough. Things You'll Need
- 2 tbsp. shallots, finely minced
- 1 tbsp. Dijon mustard
- 1/4 cup Balsamic vinegar
- 1/4 cup Extra virgin olive oil
- Kosher or sea salt
- Freshly ground black pepper
Instructions

Whisk shallots, mustard and vinegar in a small bowl. If desired, you can also do this in a blender.

Add olive oil while continuing to whisk briskly or blend.

Season to taste with salt and pepper.

Chill until ready to use.

Toss salad greens in vinaigrette before adding steak on top.
