When you add the vivid colors of fresh vegetables -- green, gold, orange or yellow -- to a meal, you add instant appeal. Keep seasonings minimal and simple to allow the fresh flavors of the vegetables to shine without covering them.   • Garlic powder

Instructions

      Steam or stir-fry the vegetables to cook them lightly. If you stir-fry the vegetables, cook them in a tablespoon or two of olive oil. If you steam the vegetables, you do not need to add any fat for the cooking process.

      Remove the vegetables from the heat.

      Drizzle the about 1 tbsp. of olive oil or melted butter for every 2 cups of cooked vegetables, coating the vegetables lightly and evenly with the oil or butter. Use less oil or butter, if you wish.

      Sprinkle about 1/4 tsp. of garlic powder over 2 cups of cooked vegetables.

      Add coarse salt and freshly ground pepper to the vegetables, using as much or as little as you desire.

      Stir the cooked vegetables lightly and gently with a large spoon to mix the seasonings and coat all of the vegetables with the ingredients.

      Serve the cooked vegetables while they remain hot.

Tips & Warnings

  • Figure about 1/2 cup of fresh cooked vegetables per serving -- 2 cups of vegetables will serve four people.

  • Vary the seasonings for the vegetables you fix. Add 1 tsp. of lemon juice and 1 tsp. of melted butter to broccoli or asparagus. Add 1 tbsp. olive oil and 1 tsp. of Italian seasoning to broiled tomatoes. Make a marinade of 1 tbsp. balsamic vinegar and 1 tbsp. olive oil and stir-fry chunks of zucchini, summer squash, peppers and onions.
