How to Cube Eggplant
Eggplant is a versatile vegetable that you can use in soups, stir-fries and pasta, or as a side with many main dishes. The skin of an eggplant can be tough, particularly larger varieties. Peel eggplant carefully, as the skin can be challenging to remove. You can tenderize the meat of the eggplant by treating it with salt to draw out the moisture. Wash the outer skin of the eggplant under cold running water. Cut the ends off with a large, stainless steel or ceramic blade knife.

Cut the outer skin off the eggplant with the knife, or use a heavy-duty vegetable peeler.

Cut the eggplant lengthwise into 1-inch wide strips. Cut the strips into 1-inch wide cubes. Keeping pieces equal in size ensures even cooking.
