If you want to add a new dimension to your cheesecake recipe, add swirls of fruit to the top or inside of the cheesecake. When pureed fruit combines with cheesecake batter in the oven, the fruit combines with the flavors of the cheesecake as it cooks. This makes the fruit mixture taste like strawberry jam while giving the cheesecake a mild strawberry flavor.   • 1 cup strawberries
  • 1 tbsp. sugar
  • Bowl
  • Rubber spatula or knife

Instructions

      Prepare the mixture for the cheesecake filling. Stir the mixture thoroughly until there are no lumps. Pour the mixture into a prepared pie crust.

      Puree about 1 cup of strawberries with about 1 tbsp. of sugar. Pour the mixture into a small bowl.

      Slide a small rubber spatula or knife into the strawberry puree. Lift the spatula so that there is a moderate amount of strawberry puree on the rubber spatula.

      Add strawberry to the inner portion of the cheesecake, if desired. Slide the spatula into the middle of the cheesecake and move it in short circular motions to create a twisting line. Slide the spatula back into the puree.

      Insert the spatula into the very top of the cheesecake mixture to add glaze to the top of the cheesecake. Only the tip of the spatula should penetrate the cheesecake filling. Move the spatula in a twisting line, allowing puree to fall into the cheesecake mixture and create swirls.
