How to Roast Twilight Peppers

Developed at New Mexico State University in 1992, the NuMex twilight pepper is an ornamental pepper that can also be ingested. They grow primarily in the southwest region of the United States. Seeds are available for purchase, however, and the twilight pepper plant is an excellent potted plant as well. The peppers themselves take around 70 days to ripen and go from yellow to orange to red. They have a Scoville rating of 1,000, which means that they are extremely spicy. Does this Spark an idea?

Instructions

      Preheat the oven to 375 F. Cover the half sheet pan in aluminum foil.

      Place the peppers on the half sheet pan and place the pan in the oven. Leave some space in between the peppers on the pan.

      Rotate the peppers by the stem using tongs to protect your hands. Check the peppers' skins as you rotate to see if they have started to blister.

      Remove the pan after about 30 minutes. Let the peppers cool for another 20 to 30 minutes.

Tips & Warnings

  • Wash your hands after touching the finished peppers. The juice is extremely hot and can irritate the skin.
