How to Make Grinder Rolls Using a Breadmachine
Grinder rolls, or hoagie rolls, are the familiar sandwich breads made by many pizzerias from their pizza dough. The combination of a chewy crust and soft interior makes for an excellent sandwich, either served cold or baked in the oven. The rolls are easy to make at home, especially with a bread machine to mix the dough. Does this Spark an idea?
Things You'll Need
- 1 cup 1 oz. warm water
- 3 1/2 tsp. sugar
- 2 scant tbsp. olive oil
- 1 lb. bread flour
- 2 1/2 tsp (one package) yeast
- 1 1/2 tsp salt
- Flexible spatula
- Extra flour
- Baking sheet
- Sharp knife
- Spray bottle or pastry brush

Combine the bread ingredients, in the order listed, in your bread machine. Take care to add the salt and yeast to opposite corners of the bread pan, because salt will kill the yeast if they come in direct contact.

Select the "dough only" cycle of your bread machine, and press the start button. Check the dough after a few minutes of mixing, and if necessary use a flexible spatula to push down any dough that has stuck onto the sides of the pan. Close the lid, and allow the machine to finish its cycle.

Remove the dough from the bread machine and turn it out onto a lightly floured counter top. Divide the dough into four or five large balls, or seven or eight smaller ones, depending on the size of rolls you want.

Knead a portion of dough to remove any large air bubbles, then flatten it into a rough rectangle. Roll the dough from the back edge to the front, jelly roll style, brushing off any excess flour as you go. Press the last edge firmly into the roll to seal it. Repeat for remaining rolls.

Place the rolls, seam side down, on a parchment-lined baking sheet. Keep them at least two inches apart, to allow room for expansion. Cover, and allow the rolls to rise in a warm place until doubled in size.

Slash the tops of the rolls with a sharp knife, and either mist them with water from a spray bottle or brush the loaves with a wet pastry brush. Bake at 450 degrees Fahrenheit for approximately 20 minutes, until golden brown. Cool completely before using.

Tips & Warnings
These rolls remain usable for a day or two at room temperature. If you will not be using them all within that time, package and freeze them for later.
