  • Fish
  • Heavy duty aluminum foil
  • Salt and pepper to taste

      Obtain a piece of the fish of your choice. This method will work well with most commonly available varieties. Choose the freshest fish you can, checking the color of its meat. The fish should have a mild fish smell, not a strong odor. Clean the fish and cut it into serving size cutlets.

      Pre-heat the oven to 375 degrees Fahrenheit.

      Place a sheet of heavy-duty aluminum foil on a clean preparation surface. Make sure to cut the foil large enough to wrap around your fish with room to spare. Place your fish in the center of the foil. If it still has skin, place it skin-side down.

      Wash the onion, garlic, and red bell pepper. Finely mince the garlic and slice the onion and bell pepper into very thin strips. Sprinkle salt and pepper over the fish, then add the garlic. Layer a few slices of onion and bell pepper over the fish until it covered, but not piled high.

      Slice the lemon in half. Squeeze the juice from half the lemon over the fish, onions, and peppers. Drizzle olive oil over the top of everything. Fold two sides of the foil in to meet in the center. Fold them together to create a seal along their length. Fold each of the ends closed in the same way, so that the entire foil packet seals tightly.

      Place the packet in a baking dish. Cook for 35 minutes in a preheated 375 degree Fahrenheit oven. Remove from oven and allow to sit for 15 minutes before opening - this allows the steam to cool slightly.

Tips & Warnings

  • This same method can be used to bake fish in parchment paper. Staple the paper closed or tie it closed with cotton twine.

  • You can also prepare the packets early in the day and store the in the refrigerator until cooking time.
