How to Broil Steak in a Glass Baking Dish
Grilling steaks evokes scenes of summertime and outdoor barbecues, but for those who don't have access to a gas or charcoal grill, an oven broiler serves as an alternative to the traditional cooking method. Because a broiler creates direct heat rather than hot air, it can produce the same juicy steaks as an outdoor grill.While a broiler pan allows juices and fats to collect beneath the steaks, a glass baking dish fitted with a baking rack can achieve the same results. Things You'll Need
- Steak, desired cut
- Kosher salt
- Desired seasonings
- Tongs
- Large Cast-iron or stainless steel skillet
- Butter
- Deep glass pan or casserole dish
- Baking rack

Allow steaks to come to room temperature. Pat the steaks dry and sprinkle generously with kosher salt and other desired seasonings.

Turn the broiler on to high to preheat the oven and position the oven rack five to six inches from broiling element.

Set the baking rack inside or on top of the glass baking dish. The rack should sit high enough so that the meat is at least one inch higher than the bottom of the glass dish.

Warm a skillet over medium-high heat. Add a small amount of butter.Place the steaks in the skillet when the butter is melted and the skillet is hot. Cook them for two minutes on each side, turning them over with tongs.
Do not crowd the steaks. Searing the meat in the skillet caramelizes the outside, so all parts of the steak or steaks should touch the skillet while cooking.

Transfer the steaks from the skillet to the baking rack using the tongs. Place the steaks in the oven and cook until they are done according to your taste, anywhere from two to ten minutes.

Allow steaks to rest to redistribute the juices throughout the meat before serving.
