How to Shuck Fresh Oysters
Prized for their strong flavor and salty brine, oysters are eaten in a variety of manners across the globe. One of the most common manners of preparation is to remove the oysters from their shell and eat them raw in a process called shucking. Although their tightly clamped shells often are thought to be difficult and injurious to breach, with the proper procedures and precautions, oyster-shucking can be safe and easy. Run cold water over the unopened oyster and clean off all dirt and debris.

Dry the oyster, then grasp it in a gloved or towel-covered hand.

Rotate the oyster until the hinge of the shell is facing you, then slide your knife blade 1/2 inch between the shells, and run the blade from one side of the hinge to the other.

Twist the blade to split the shells.

Pull the top shell off, but hold the lower shell steady to keep from spilling the brine.

Clean the knife, then slide it under the meat of the oyster to remove it from the shell.

Serve the oyster on the half-shell or remove the meat and use in another preparation.
