Instructions

  1. Hard Chocolate

      Melt 1 cup of chocolate chips in a small saucepan over low heat.

      Stir the chips constantly until they start to soften. Keep the heat low until they begin to melt.

      Remove the pan from the heat when the chips are almost completely melted. Stir to remove any remaining lumps.

      Drizzle the melted chocolate over a cooled and refrigerated cheesecake. Pour the chocolate directly from the pan over the cake.

      Place the cake uncovered in the refrigerator until the chocolate hardens. Cover with plastic wrap to preserve the cake.

    Soft Chocolate

      Place 1 cup of water, 1/2 cup of sugar, 1/2 cup of corn syrup and 3/4 cup of cocoa powder in a double boiler. Bring the mixture to a boil over medium-high heat. Stir occasionally to dissolve the sugar.

      Add 2 oz. of chopped semi-sweet baker's chocolate. Measure 1 tbsp. of instant espresso powder and put it into the mixture. Remove the sauce from the heat, stirring constantly.

      Let the sauce cool for 3 to 4 hours before serving. Add a small amount of warmed milk to the sauce to make it thinner. Spoon the sauce over chilled slices of cheesecake.

Tips & Warnings

  • Store the sauce in an airtight container in the refrigerator. Discard after 7 days.
