Popcorn kernels, though hard and seemingly durable, need careful attention when being stored. As kernels are heated, the internal water heats. When it reaches 212 degrees, the water converts to steam and expands, which increases the internal pressure and causes the inside to burst through the hard outside. For this to take place, however, the internal water content of each kernel must not drop below 13.5 and 14 percent. Though freezing may preserve other foods, it is also known to dry them out.       Seal popcorn kernels in an airtight container.

      Place the airtight container in the freezer. Though sensitive to water loss, popcorn kernels are not particularly sensitive to cold, so no temperature alteration should be necessary.

      Remove the container from the freezer when you are ready to use the popcorn kernels, but use the kernels within a few months. Kernels may be resealed and refrozen should timely use prove impossible.

  • Though many plastic storage bags are purported to have airtight seals, most warp too greatly with heat fluctuations to be truly effective. Jarring kernels as you would jams and preserves will create an airtight seal, but the heating process makes it less desirable when considering the heat-sensitive nature of the kernels. For a sure seal, consider obtaining a vacuum-sealing packaging system. Such items vary in cost and quality, but they offer visual proof of vacuum sealing.
